ROASTED DELICATA SQUASH

This easy recipe for Roasted Delicata Squash with a Parmesan and herb crust is a great way to enjoy the bounty of winter squash season. This squash is roasted to perfection with a tender inside and a flavorful crust with irresistible crispy bits from the Parmesan. This recipe will have you hooked on delicata squash for years to come.   1. Place oven rack in the center of the oven and preheat oven to 400°F. Line a baking sheet pan with parchment paper, and set aside.
  2. Thoroughly wash and dry the squash. With a heavy sharp knife, carefully halve squash lengthwise (do not peel), then remove and discard the seeds and strings with a spoon (see Note #1). Place them cut side down on a cutting board, and cut them into ½ inch thick slices (half moons), and set aside.
  3. To a large mixing bowl, add 2 tablespoons olive oil. Then crush garlic with a garlic press, and add to the bowl, along with salt, pepper, and red pepper flakes (optional). Mix well, then add sliced squash, and toss until each piece is thoroughly coated. Transfer to the prepared baking sheet, and spread into a single layer (separating each piece). Bake for 20 minutes. While squash is roasting, make the Parmesan crust mixture.
  4. In a small mixing bowl, add chopped parsley, thyme, Parmesan, and lemon zest. Mix until thoroughly combined.
  5. After about 20 minutes of baking, remove squash from the oven, flip each piece over, sprinkle Parmesan mixture evenly over the squash, and drizzle remaining ½ tablespoon olive oil over the topping. Return to the oven to bake for another 10 minutes until the edges are golden brown and tender (see Note #3 - test for doneness with the tip of a knife). Serve immediately, and enjoy!

Notes

  1. I find that using a grapefruit spoon with a serrated edge makes it easier to remove the strings and seeds. 
  2. Although optional, the crushed red pepper flakes are delicious in this dish and give the squash a medium-mild spiciness. I highly recommend the added spice, but if you have a mild palate, just add only 1 pinch instead. 
  3. Keep a close eye on the oven to make sure the parmesan does not burn. The Parmesan that falls on the baking sheet becomes the crusty bits, which are the best part. They will become golden brown, and will be darker than the crust on the squash.

I love any type of roasted veggies, but this Roasted Delicata Squash may just be my favorite so far! The squash itself is roasted to perfection with a tender inside and a flavorful Parmesan and herb crust. The best part is the irresistible crispy bits from the Parmesan that get golden brown during the last bake. This easy recipe is a great way to enjoy the bounty of winter squash season. If you give this easy recipe a try, it will likely have you hooked on delicata squash for years to come. 

A variety of winter squash, delicata squash is distinctive for its bright yellow and green striped skin. When sliced, it has a beautiful scalloped edge reminiscent of acorn squash. This unique winter squash also belongs to the same species as summer squash, like zucchini and pattypan squash. 

Here are some of the health benefits of delicata squash:

  • Essential Nutrients: Delicata squash is a great source of essential nutrients, including vitamins A and C, potassium, and fiber, which play a part in overall health, immune function, and proper digestion.

How do you ensure the best results from this recipe?

My 5 tips to make the perfect Roasted Delicata Squash:

  1. Use organic ingredients, especially because you are not peeling the skin of the squash. Fresh herbs should also be organic. 

  2. Use a heavy duty knife when cutting through squash. It’s important to have a firm hand on both the squash and the knife. Start with piercing the middle, and working your way to each end. I find prying open the squash when you get to the stem end makes it much easier than trying to slice through it. 

  3. Timing is important. Make sure you start making the topping as soon as you place the squash in the oven. It only takes a few minutes to chop the parsley and thyme, and about 1 minute to mix the Parmesan with all the topping ingredients. You should have it ready as soon as the 20 minute timer rings. 

  4. As all ovens are different, the baking time may vary slightly for each oven. The times provided (i.e., 20 minutes + 10 minutes) were the perfect time for my oven. The first roasting will not completely cook the squash, but you should see it start to get a bit golden on the edges. If you have a very hot oven, you may want to flip them at 15 minutes, and finish with 5-10 minutes for the last bake.

  5. Keep an eye on the Parmesan. The crusty bits should be a dark golden brown, but the squash should be light golden with slightly darker edges.

Adapted from the Roasted Delicata Squash Recipe with Parmesan by skinnytaste.com. This was a wonderful recipe to start, but I made some changes to make it even better! I changed up the quantities a bit, added red pepper flakes, more lemon zest, and used Himalayan pink salt instead. Then I increased the thickness of the squash slices to give them a more substantial bite (they roast perfectly this way), and I changed the technique and cooking times, as well. Ultimately, you should be the judge, but my taste testers all think my version is even better!
