LIVELY RASPBERRY LEMONADE

Tart lemons and succulent fresh raspberries are blended to give this Lively Raspberry Lemonade its vibrant color and bold flavor. Sweetened with agave nectar (sugar or stevia), this festive drink uses only 4 ingredients and can be made keto friendly. It’s quick to prepare and can be made ahead of time. Instructions

  1. Roll lemons to make them more juicy. Then using a juicer or reamer, squeeze lemon juice, and discard any seeds.
  2. Using a fine mesh strainer, rinse and drain raspberries.
  3. To a large pitcher of a high speed blender (see Note #3), add raspberries, lemon juice, only 1 ½ cups water, and agave nectar (or sugar). Cover, and blend for about 15 seconds, until completely blended and frothy.
  4. Using the same strainer or a nut milk bag, double strain (see Note #4) the blended lemonade into an extra large measuring cup (8 cup) or bowl with a spout. Add remaining 1 ½ cups water, and stir to combine. Pour into a pitcher, cover, and chill in the fridge until cold. Stir well just before serving. Pour over ice, garnish, and enjoy!

Notes

  1. Meyer lemons give this lemonade a slightly softer and sweeter taste. Regular lemons add a more tart flavor. Based on the tartness of your lemons, I suggest tasting and adjusting the sweetness to your liking once the lemonade is combined.  
  2. You can make this lemonade with agave nectar, ultra fine granulated sugar, or a stevia blend. To make this keto friendly, use about ⅔ cup or ¾ cup Truvia Sweet Complete stevia calorie free sugar substitute for about 5 net carbs per serving.
  3. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe. If you don’t have a high speed blender, you can use a regular blender, but it may take longer to blend. 
  4. Strain the lemonade at least twice to get rid of all the raspberry seeds. They are very tiny and often get through the strainer. Depending on how fine your strainer is, you may have to strain it three times. 
  5. Makes about 5 cups (5 servings - 8 ounces per serving).

This Lively Raspberry Lemonade is the perfect recipe to celebrate citrus season! Bursting with the bold flavors of fresh raspberries and tangy lemons, this vibrant concoction is a refreshing twist on a classic favorite. This lemonade recipe uses no refined sugar, but I have recipe variations available below if you prefer to use sugar. 

Although citrus season in California is during the winter, I don’t see why you should wait until summertime to enjoy this thirst quenching beverage. Its beautiful color and bold flavor will perk you up any time of year. Whether enjoyed on a lazy afternoon lounging in the backyard or serving a crowd at a lively gathering of friends and family, this delicious lemonade recipe is sure to brighten your day. 

How do you ensure the best results from this recipe?

My 5 tips to making Lively Raspberry Lemonade:

  1. Organic produce is the way to go with this recipe. If you have a lemon tree (or a kind neighbor with one in their backyard), it’s a great way to use them fresh off the tree. 

  2. Meyer lemons give this lemonade a slightly softer and sweeter taste. Standard lemons add a more tart flavor. 

  3. I like the taste of this lemonade when it’s sweetened with organic agave nectar, which also gives it a low-glycemic index. If you prefer a traditional recipe using sugar, it’s an easy swap. Just visit the Pimp My Recipe section below for details.

  4. Based on the tartness of your lemons, I suggest tasting and adjusting the sweetness to your liking once the lemonade is combined.  

  5. Double straining is a must, otherwise, you’ll be chewing hard seeds as you are sipping. Triple strain, as needed. You will know when to stop straining, as there will be little to no seeds left in the strainer. It’s best to use an extra fine mesh strainer. Or a nut milk bag works very well, too. 

It’s time to customize and Pimp My Recipe. 

Pimp My Recipe:

  • Make it with Sugar: Instead of ½ cup organic agave nectar, replace it with ¾ cup ultra fine sugar (or to taste). Ultra fine sugar will dissolve more quickly. Start with ¾ cup, then taste and adjust to your liking. 

  • Make it More Lemony: Instead of 6 ounces of fresh raspberries, use only 4 ounces. Depending on the tartness of your lemons and berries, you may have to adjust the sweetness. 

  • Make it Keto Friendly: Use about ⅔ cup or ¾ cup Truvia Sweet Complete stevia calorie free sugar substitute for about 5 net carbs per serving.
