EASY PERSIMMON & PROSCIUTTO BUNDLES

Easy Persimmon & Prosciutto Bundles are a quick and easy appetizer to make for the holidays or whenever persimmons are in season. Each bundle is a perfect harmony of sweet and salty flavors and textures. Fuyu persimmons, prosciutto, mozzarella, and fresh basil leaves are wrapped together and finished with a drizzle of extra virgin olive oil.

Ingredients

Instructions

  1. Using a sharp knife, use an angle cut to remove (and discard) the stem from the persimmon. Peel the persimmon with a vegetable peeler, then halve lengthwise (from stem to end). Slice crosswise into thin slices (no more than ¼ inch thick). You should end up with 24 slices in the shape of half moons. Lay them out in a single layer on a plate, and sprinkle tops with salt and pepper.
  2. Cut each slice of mozzarella into 8 rectangles, you will end up with 24 pieces. Cut each slice of prosciutto into 4 rectangles (have lengthwise, then halve crosswise). Cut basil leaves into 1 ½ inch strips (24 pieces).
  3. Lay out one piece (rectangle) of prosciutto on the cutting board. Put a piece of basil (crosswise) in the center of the prosciutto, then layer a persimmon slice, and a piece of mozzarella (crosswise). Fold over the ends of the slice of prosciutto to form a bundle, and arrange them “seam-side” down on a serving plate (12 inch rectangular plate or 12 inch round plate). Cover with plastic wrap, and refrigerate. When ready to serve, drizzle with olive oil, and enjoy!

Notes

  1. Be sure the Fuyu persimmon(s) are ripe, but not too soft. The slices should be very thin, if possible, slightly thinner than ¼ inch. 
  2. Get your mozzarella slices from the deli counter, and ask for the thickness of “sandwich slices.” Dietz & Watson and Boar’s Head make good quality deli counter cheeses. If you don’t have a deli counter in your market, packaged cheese, like Sargento sliced mozzarella, is available in the dairy (cheese section) in most markets. 
  3. I used Boar’s Head Riserva Stradolce prosciutto for this recipe. Another good option that is usually available in most markets is Columbus sliced prosciutto.  
  4. Makes about 8 servings (3 bundles per serving).

SERVING SUGGESTIONS

Place bundles in a single layer on a 12 inch rectangular plate or 12 inch round plate , and drizzle with a good quality extra virgin olive oil. For a holiday theme, arrange in the shape of a wreath or Christmas tree!

Persimmons are seasoned and layered with prosciutto, mozzarella, and fresh basil, then drizzled with extra virgin olive oil for the final element that brings it all together. It’s often difficult to find good persimmon recipes when persimmons are in season. So if you are wild about Fuyu persimmons, or have a backyard persimmon tree, this winter fruit recipe is one to save as it has just the right balance of flavors and textures to make one delicious bite! 

Fuyu persimmons have a vibrant orange color and a sweet, honey-like flavor. They have a similar appearance to an orange tomato. Fuyu persimmons have a tart or bitter taste unless they are fully ripened. They are best enjoyed when they are soft to the touch. Persimmons are not only delicious but also offer a range of health benefits. Here are some of the notable health benefits of Fuyu persimmons:

  • Vitamins: Fuyu persimmons are a good source of vitamins A, C, and E. These vitamins play crucial roles in supporting immune function, promoting skin health, and acting as antioxidants to protect cells from damage.

  • Dietary Fiber: A rich source of dietary fiber, persimmons can help to aid digestion and contribute to regulating blood sugar levels.

  • Antioxidants: Fuyu persimmons contain various antioxidants, including beta-carotene and lutein, which help neutralize free radicals in the body.

How do you ensure the best results from this recipe?

My 5 tips to making these Easy Persimmon & Prosciutto Bundles:

  1. Since there are so few ingredients in this appetizer, quality is very important. Use organic persimmons and basil when possible. Make sure your persimmons are ripe (soft to the touch). They should not be squishy, but they should hold their shape when sliced.

  2. A good quality sliced prosciutto (like Boar’s Head Riserva Stradolce prosciutto, or Columbus sliced prosciutto).  

  3. Have your mozzarella sliced fresh from the deli counter, and ask for the thickness of “sandwich slices.” You want this to be a rich and unctuous bite, so use a semi-soft, low moisture, whole milk mozzarella cheese, like Boar’s Head or Dietz & Watson. They both make good quality deli counter cheeses. If you don’t have a deli counter in your market, a packaged cheese, like Sargento sliced mozzarella, is available in the dairy (cheese section) in most markets. 

  4. Because prosciutto is sliced so thinly, it can be very tricky to cut. It often shreds or falls apart. I recommend leaving on the plastic or paper separators when cutting each slice into 4 pieces. Once cut, you can remove one at a time when you are ready to layer the bundles. Watch my recipe video for the easiest method to slice prosciutto. Do not overload your sandwich (to prevent the filling from squeezing out)

  5. With the exception of the prosciutto, each ingredient should be about the same size (same width and length), so it’s easy to fold the prosciutto over the other ingredients. And, don’t forget to season your persimmons! Although the prosciutto and deli sliced mozzarella are both very salty, it really makes a difference in the overall flavor.  

It’s time to customize and Pimp My Recipe. 

Pimp My Recipe:

  • Make it with Other Cheeses: Prosciutto has a very rich and strong flavor, so you don’t want your cheese to compete with the other ingredients, or to be too strong. Besides a good quality mozzarella, I recommend substituting with any of these mild, fresh deli sliced cheeses, like aged provolone, fontina, or even muenster or havarti.  

  • Don’t Have Persimmons? If you want a softer textured fruit similar to persimmons, a delicious and classic flavor combination is cantaloupe and prosciutto. Or, try thinly sliced pears or apples. To prevent these two fruits from turning brown, you will need to brush them with a little fresh lemon juice just after slicing them. Just make sure to cut all these fruits into equal sized pieces that will fit into the prosciutto bundles.
